Breakfast Comfort Foods at Today's Modern Weddings with Caterer, Peter Callahan
As a special treat, my mother used to make breakfast for dinner for my sisters and me when we were kids. I absolutely loved it because the concept on its own was so unexpected – pancakes, French toast or scrambled eggs for dinner? I like to keep this sense of surprise when I serve breakfast hors d’oeuvres, which, incidentally, aren’t always served at breakfast time. Like my mother did with me and my sisters, I have brought that same playful magic into catering weddings. Imagine how fun it is to offer coffee and donuts or rice krispy canapés at a modern wedding reception. Or, to butler pass mini bagels filled with lox and cream cheese alongside caviar cones and Champagne at a black tie wedding celebration. American favorite breakfast foods can be sleek and modern without sacrificing deliciousness for a picture-perfect presentation.
When I style a wedding menu with breakfast foods, I cannnot help but think of Kate Spade. For a decade we collaborated on breakfast parties for her fashion company. During Fashion Week we would host wonderfully imaginative breakfast receptions for her clients and the press to showcase her new collections. We would dream up different foods and I would coordinate the food to the theme of the show. Kate would say, “Peter, your food IS the entertainment!” The years of collaborating on these chic breakfast parties inspired me to create whimsical miniature versions of popular breakfast foods such as blueberry pancakes, ham and cheese egg sandwiches, oatmeal crème brulee, mini strawberry smoothies, mini sugared donuts, and scrambled eggs and bacon.
Breakfast served in miniature always gives guests something new to talk about, whether in the wee hours of the morning or during the cocktail hour. Of course, as you can imagine, they are also perfectly fabulous for weekend after wedding brunches and bridal showers.
